Carol Ann Knapp, 48 , died 04/15/08 in her Independence Township home, known as Elmcrest Farm. Carol lived in Independence Township, NJ since 1996. It is here where Carol managed the farm assessments and mastered her love of home design. From 1989-1994, Carol and her husband AJ Knapp, III owned and operated the highly acclaimed Christies Restaurant in Westtown, NY-an upscale Gourmet Cuisine restaurant set in a turn of the century restored Victorian Building. Carol specialized in the design of the building, its accoutrements and the menu which changed weekly. and was born in Newton, NJ on 01/07/60.

Occupation: Carol graduated from West Morris Central High School, 1978; Montclair State College, 1982; during the 80's, she worked on Wall Street as a Stock Broker for Prudential Securities and later as a Mortgage Loan Officer for Champion Mortgage and Meridian Bank Corp. Carol was one of Champion Mortgage's first employees and starred in their early television commercials.

Additional Information: Carol was a loving wife, daughter, sister and aunt; most recently she was known for founding and operating Homescapes-a Design Firm specializing in landscape and exterior home design. Homescapes was actually derived from local residents knocking on the door of Carol's home asking for help to make their home look like hers. It was in this same manner that the magazine, Better Homes and Gardens, solicited Carol to do a photo shoot on her home as well. Carol trademarked the name Homescapes two years ago. Carol was a true pet lover; at one point, she cared for as many as 5 dogs and 11 cats at her home. All but one of the cats were strays who showed up or were dropped off at the Knapps's doorstep. Needless to say, each one was vetted and received loving care to the extent that each feline had it own individual food dish. Carol was a member of the DAR-Daughters of the American Revolution, Panther Valley Golf and Country Club, NJ Department of Forestry, and a regular contributor to the ASPCA, Humane Society, United Way and Multiple Sclerosis.
